1. Equipment Principle
It is mainly composed of multiple heating chamber and separation chamber. Among, the heating chamber is made up by numbers of shell and tube to concentrate the material. The most common used is falling film evaporator. The material flows into the heating tube evenly through the distributor at the top. Under the action of gravity, the material along the inner wall of the tube into a film to drop for evaporation. In order to form the film flow, it needs to design the liquid distribution device when feeding.

(1) Advantages:
① The tube is not easy to plug, which is suitable for high evaporation concentration.
② The residence time of one way is short, which is suitable for the evaporation of heat sensitive materials.
③ Large effective temp. difference and high product concentration.
④ Energy saving, low steam consumption and low cooling water circulated qty.

(2) Disadvantages:
① The heating transfer coefficient is smaller than the rising film evaporator.

Application in maltose, glucose, maltodextrin, fructose, etc. production
4. Industry Application
· Glucose industries: starch glucose like maltose, glucose, maltodextrin, crystalline dextrose, fructose, F42, F55, crystalline fructose, etc. Xylose.
· Chemical industries: organic acids, including L-lactic acid, citric acid, VC, MSG and various amino acids, like lysine, L-phenylalanine, leucine, methionine, etc.
· Food industries: stevia, sorbitol, xylitol and other sweetners, antioxidant Iso VC sodium, etc.
